Instant Craving Cure: Easy Coconut Chia Pudding

Chia mango pudding

Preparing this breakfast using coconut milk and chia seeds is nearly as enjoyable as eating the finished product! The chia seeds are so satisfying to watch as they expand and thicken up to create a delicious spreadable texture. For a quick, sweet and chilled breakfast, this is a great option.

On my first attempt I simply mixed everything together in a glass bowl and placed it in my fridge. After four hours I took it out to find a layer of watery coconut liquid that had formed on the top of a solid hockey puck of chia seeds. It was very grainy and definitely not pleasant to eat!

I learnt a valuable lesson from this. The key to making this recipe perfect every time is to stir the mixture twice within the first 10 minutes. This will help to avoid any rubbery clumps. After mixing the chia seeds the second time they will remain separate and absorb the coconut milk to create an even texture.

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • Optional toppings: fresh mango toasted coconut flakes, raspberries

  • Measuring cups and spoons
  • Four small glass mason jars with tight lids
  • Pour the canned coconut milk, almond milk, maple syrup, vanilla extract, and sea salt into your mixing bowl. Whisk until smooth and pale white.

Chill for at least 4 hours or overnight to allow the chia seeds to fully expand and achieve a creamy, thick consistency.

Why Coconut Milk and Chia Seeds Are a Match Made in Heaven

This basic mix is not only a popular choice all over breakfast menus, but it’s for a good reason. Chia Seeds are tiny sponges. These expand tenfold when they are placed in liquid, and coat each individual seed with a gel. This gel makes any thin liquid into a thick, spoonable pudding without using any cornstarch, eggs or heat.

A magic occurs when chia seeds and coconut milk are combined. Full-fat coconut milk has a beautiful coconut dessert like consistency which cannot be achieved with light coconut milk. Packaged fat is not used, making the pudding surprisingly heavy (on the mouth, like pie filling for breakfast), and delicious, yet filling you up until lunch.

It also offers a great flavor balance. The delicate sweetness of coconut complements the subtle nutty notes of the chia seeds and a hint of vanilla extract ties the flavors together much like a tropical treat.

Choosing the Right Coconut Milk Base

Not all coconut milk sold at the grocery store acts the same way in this dish. Walking down the aisles, you will notice two main types: carton coconut milk drinks found in the dairy section, and canned coconut milk found in the international or baking aisle.

For the best results, stick to canned coconut milk. Canned milk contains a high percentage of coconut cream, which yields a thick, custard-like consistency. If you open a can and find a thick layer of white cream sitting on top of clear liquid, do not throw the liquid out! Simply dump the entire contents of the can into your bowl and whisk until it becomes smooth before adding your seeds.

Carton coconut milk beverage is mostly filtered water. If you use carton coconut milk alone, your pudding will turn out thin and runny instead of thick and creamy. However, mixing a little almond milk or carton coconut milk with heavy canned coconut milk keeps the pudding from feeling overly heavy while keeping that thick texture intact.

Pro Tip: For a super creamy consistency without seed texture, blend your coconut milk, maple syrup, and chia seeds in a high-speed blender for 30 seconds before letting it chill in the fridge.

Step-by-Step Prep Tricks to Prevent Clumps

Creating chia pudding doesn’t take more than ten minutes from your kitchen time, but not being careful during preparation can give you an undesirable result. Just by following some tips, you will be able to prepare a smooth pudding easily.

First, always combine wet ingredients and syrup before mixing with dry seeds. If you try to pour maple syrup on dry seeds, it will make them stick together, forming glue balls which won’t separate any longer.

Second, allow your seeds to move freely. You’d better use a wide glass bowl and a balloon whisk because it works much better than stirring all the ingredients in a small jar using a spoon. In addition, a whisk helps to separate seeds allowing water to reach each one of them.

Combining and blending your mixture before chilling it will give you a silky smooth pudding in case you do not like the tapioca-like consistency of chia seeds. For those who are cooking for picky eaters, it’s possible to blend the whole mixture within thirty seconds using a blender, and it will give you the same creamy chocolate custard with no visible seeds.

Flavor Variations You Can Try This Week

Once you master the base recipe, you can tweak the flavor profile to match whatever you are craving. The neutral coconut base takes on spices, extracts, and fresh fruit easily.

      • Dark Chocolate Espresso: Whisk two tablespoons of unsweetened cocoa powder and a pinch of espresso powder into the milk before adding the seeds. Top with dark chocolate shavings.
      • Tropical Mango Lime: Layer your finished pudding with fresh diced mango, a squeeze of fresh lime juice, and a sprinkle of unsweetened toasted coconut flakes.
      • Berry Layered Parfait: Mash fresh raspberries with a fork and alternate layers of mashed berries and coconut chia pudding in tall glass jars.
      • Spiced Golden Milk: Add half a teaspoon of ground turmeric, a pinch of black pepper, and half a teaspoon of ground cinnamon for a warm, cozy morning bowl.
      • Peanut Butter Swirl: Warm two tablespoons of creamy peanut butter and swirl it through the pudding right before serving.

Meal Prep and Storage Secrets

This dish is one of the easiest meal prep options you can make on a Sunday afternoon. Because chia seeds hold onto moisture so well, the pudding actually improves after sitting in the fridge for a day or two as the flavors settle together.

You can prepare these jars up to five days in advance for a ready-to-eat breakfast. Small 8-ounce mason jars with screw-top lids are ideal for single-serving portions. You can grab one straight from the fridge on your way out the door in the morning.

If you prefer to add crunchy toppings like toasted nuts, seeds, or granola, hold off on adding them until right before you eat. Storing crunchy toppings inside the jar overnight causes them to go soft and soggy in the fridge moisture.

Troubleshooting Common Texture Issues

If your pudding did not turn out quite right, do not throw it away! Most texture problems are quick to fix with a simple adjustment.

If your pudding feels too thick or paste-like, you likely used extra chia seeds or left the jar uncovered. Simply pour in a tablespoon or two of extra almond milk and stir briskly with a fork until it loosens up to your preferred consistency.

If your pudding is too runny after four hours, the seeds might be older or your liquid ratio was slightly off. Add one extra tablespoon of chia seeds, stir well, and return the jar to the fridge for another 30 minutes to firm up.
