Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup whole milk or unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt

Equipment

  • 8-ounce or 16-ounce glass Mason jar with tight lid
  • Measuring cups and spoons
  • Small silicone spatula or spoon
  • Pour the old-fashioned rolled oats, chia seeds, and fine sea salt directly into your glass jar. Scrape the bottom edges with a spoon to mix the dry ingredients evenly.
  • Pour in the milk, plain Greek yogurt, pure maple syrup, and vanilla extract. Stir briskly for 30 seconds until the mixture looks completely pale ivory without any clumped chia seeds stuck along the glass walls. You should hear a thick squishing sound as the yogurt blends into the liquid.
  • Seal the lid tightly and place the jar flat inside your refrigerator for at least 6 to 8 hours overnight.
  • Unscrew the cap in the morning. Look for a dense, custard-like top surface that bounces back gently when touched with your spoon. Give it one quick stir, add your favorite toppings, and enjoy cold.
